Twice Bake Potatoes

4 potatoes baked

1 small onion chopped

¼ cup of milk

¼ cup of cheese

1 egg

1 tbs of lemon

2 tbs butter

2 tbs oil




Bake the potatoes in microwave or oven till done.

Sauté half of the onions in oil when they are half done add mushroom. Mixture is ready when onions become transparent.

Make a cross in the potato with a knife. Squeeze potatoes so inside comes out of the cross section. Then scoop out the inside.

Add the insides of the potatoes in a bowl with the other half of onions, milk, egg, lemon, butter, salt pepper and cheese (save some of the cheese to put on top of the mushroom mixture)

Use a Potatoes Masher or blender to combine ingredients together.

Use spoon to scoop the potato mixture back into the potatoes.

Add foil paper to muffin tin place the bake potatoes in foil, no need to cover potatoes. Top with mushroom mixture and remaining cheese bake for 20minutes.
