Ginger Glazed Salmon
This Ginger Gazed Salmon recipe was found on the Highliner`s website. It’s perfect if you have guests for dinner The key to this recipe is, not over cook the fish.

1 Wild Pacific Salmon block fillet,400g, it serves 3( If you use fresh salmon reduce cooking time)
3 tbsp orange juice(I used one small orange)
2 tbsp brown sugar
1 tbsp soy sauce
1 tsp Dijon mustard
1 tsp fresh ginger root, grated (the recipe calls for tsp, I ended up using a quarter size)
1 large garlic clove, minced
1/4 tsp black pepper
1 tsp salt( or to taste)
Set oven at 450F
Unwrap salmon Block fillet
Combine all ingredients, line shallow bowl with foil wrap place salmon in foil wrap.
pour mixture over fillets.
Bake for 35 minutes, after 15 minutes turn it once
Pan seared vegetables
2 tbsp of butter
2 crushed garlic cloves
1 green onion (Scallion)
1 Orange, red, or yellow pepper ( I only used 1/2)
Snow peas I used about 10 washed, cut tips off
A dash of salt and pepper
1 quarter cup of tomato
In a frying pan melt butter, add crushed garlic.
Add the bottom portion of the green onion, add peppers, dash of salt and pepper and tomato. Sauté for 1 minute. You want the snow peas to remain firm and crispy.
Serve vegetables with the salmon, use the top of
the green onion for garnish.
