Butternut Squash Soup
1 large butternut of squash.
1 carrot peeled
2 Peeled pears
1 cup of onions of finely chopped onions
½ can of coconut milk
1 pinch of ginger
1 pinch of cinnamon
1 pinch of salt
Peel butternut squash,(If you have a difficult time peeling squash follow instructions below) Peel, carrots, pear and put all in a large pot of boiling water also add onions.
When fork can go thru squash it is ready.
Use a potato masher to mash ingredients. Then add coconut milk and ginger and cinnamon and salt to taste.
Finish!
Note if you have taken any of the items out too soon and it is not soft enough, throw into a blender and blend the rest.
If squash is too difficult to peel
Wash squash and cut it up and place in large pot of water.
In a separate smaller pot add onions carrots and pears. Boil until all items are soft.
When a fork can go thru it effortlessly drain squash. When it is cool enough to touch remove skin and put back into large pot.
