Healthy Avocado Sandwich
Try a healthy Avocado sandwich for lunches.
My youngest son has never been a lover of meat. I decided to throw together things he enjoys for a sandwich. This turned out to be a huge success.
This is amazing if you grill the outside of the bread a bit. You can also toast it before you make it.
For each Avocado Sandwhich
Bread or bun
1 slice of Swiss cheese
1 layer of yellow or red peppers
4 to slices of cucumber, or enough to to cover the bread
1 or 2 slices of tomato
Appropriately one ice cream size scoop of Avocado mixture
One avocado mashed, a dash of hot sauce and 1/4 teaspoon of lemon
Depending on how much you put on each sandwich it will do for two to three sandwiches.
